Potatoes have to be the most versatile vegetable. They can be made into almost anything and are always so scrumptious, yes, scrumptious. I ended up actually making 2 batches of these and added turmeric to convince myself I deserved them because health and that.

One thing I have to point out is that usually I can give an idea of how many portions a dish will be, however with hash browns, it depends who's in the room how hungry everyone is, and, people seem to come out of the woodwork when these are thrown onto a plate. be careful and make more. I would aim for 1 potato per person at the minimum.

Ingredients
- 2 large russet potatoes, peeled and grated
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- Goose fat
- Cooking spray or olive oil spray
Method for crispy hash browns:
1. Grate the Potatoes: Start by peeling the russet potatoes and using a box grater or a food processor with a grating attachment, grate the potatoes into a bowl. Once grated, wash in a metal bowl to wash away the starch. This is important.
2. Once washed, place the potatoes in a clean kitchen towel and squeeze out excess moisture. This will help your hash browns turn crispy. Crispy hash browns are what we want, none of this soggy bottomPlease pay attention here and squeeze properly. Get right in there.
3. In a pot, add a good glug of goose fat and heat to medium temp. Add the potatoes and cook in fat gently, probably for about 4-5 minutes. You can tell it's done when the potato starts to soften.
4. Transfer back to the bowl and add turmeric powder, paprika, salt, black pepper, and cayenne pepper. Mix well until the spices are evenly distributed throughout the potatoes.
5. Preheat the Air Fryer: Preheat your air fryer to 190°C for a few minutes.
6. Shape the Hash Browns: Take a handful of the grated potatoes and press them firmly together to form a compact hash brown patty. Repeat with the rest of the potatoes. The size and thickness of the patties can be adjusted according to your preference. Too thin and they'll be crispy but not really a hash brown, too thick, and they won't be crispy at all.
7. Air Fry the Hash Browns: Lightly grease the air fryer basket with cooking spray or olive oil spray. Place the hash brown patties in a single layer in the air fryer basket, making sure they don't overlap. Depending on the size of your air fryer, you may need to cook the hash browns in batches.
8. Cook the Hash Browns: Air fry the hash browns at 200°C for 15-18 minutes, flipping them halfway through the cooking time. This will ensure they cook evenly and turn crispy on both sides.
9. Serve and Enjoy: Once the hash browns are golden brown and crispy, remove them from the air fryer and transfer to a serving plate. Serve them hot as a delightful side dish for breakfast or brunch.
10. For the sauce, I made a quick truffle oil mayo. Easy peezy, add a splash of truffle oil to pre made may and mix together. If you don't have truffle, add a squeeze of lemon into the mayo, it's awesome!
